Bundle Up With A Bowl Of Chili

Not to toot my own horn, but I always get rave reviews whenever I whip up a pot of chili. I used to add a can of black beans to my beef chili, but that all changed about five or so years ago. Here’s what happened: I was watching a food program and someone said something along the lines of “real chili doesn’t have beans.” For some reason I took that sentence to heart, and my beef chili has been beanless ever since. To bulk up my pot of tasty goodness though, I did start adding red bell pepper which I do believe has made my recipe even better. My signature beef chili is not only delicious but a breeze to make and the perfect cold weather meal.

As a child, I was incredibly fortunate to have well-traveled parents who were adventurous eaters. I was also blessed with a mother who cooked dinner of various cuisines at least five times a week if not more. Last but not least, I grew up in Los Angeles – a city full of spectacular eateries owned by folks from every corner of the world, superb California produce, and local international markets teeming with exotic ingredients. Ever since I was a young girl, my mother always promoted the use of natural products whenever possible. She wasn’t a fan of dyes or artificial ingredients and always reminded us to try and be mindful of what we ate and what we put on our skin. And since I was an asthmatic who also suffered from allergies and eczema, my mom was extra cautious about the bath soaps and lotions she purchased for our family. Mostly everything was unscented and limited in its ingredients…for the times.
